FRIES B4 GUYS is on Cambridge Street in Allston. Chef Ahmet runs the kitchen with one rule he repeats to everyone: if he would not eat it himself, it does not go out. That covers everything on the menu.

The beef comes from a halal-certified butcher. Delivered fresh and ground the same morning it gets used. No pre-packaged meat, nothing carried over from the day before.

That was the plan from day one. Chef Ahmet was not interested in figuring it out later. A halal kitchen starts with the sourcing and that part was decided before anything else.

Not just the burgers. Every item at FRIES B4 GUYS is halal. The Dutch-style fries, the Turkish kumpir, the Belgian waffles, and all 8 in-house sauces. You do not have to go through the menu asking about each thing.

03The halal burger

Two burgers on the menu right now. The FRIES B4 GUYS Burger and the Blue Royal. Both use prime quality halal beef. No fillers, nothing mixed in. Chef Ahmet built both burgers so the meat is what you taste, not a stack of toppings covering it up.

The buns get baked in the kitchen every morning. Come in around noon and you can watch them come out. A bun from that morning is a completely different thing from one that arrived on a truck.

There are 8 sauces and all of them are made in-house. The FRIES B4 GUYS sauce took about 10 rounds of testing before it was right. Nothing comes from a bottle.

04Halal food in Allston open until 2 AM

Most halal spots in Boston wrap up by 10 or 11 PM. FRIES B4 GUYS stays open until 2 AM every day. That was a deliberate call. Allston has a big student population from BU and BC and those students need real food late at night.

After 9 PM the most popular orders are the burgers and the Dutch-style fries. The kumpir, a Turkish loaded baked potato made in-store, is also on the menu and takes about 2 minutes to plate once the potato is ready.
