The buns get baked in the kitchen every morning. Come in around noon and you can watch them come out. A bun from that morning is a completely different thing from one that arrived on a truck.

There are 8 sauces and all of them are made in-house. The FRIES B4 GUYS sauce took about 10 rounds of testing before it was right. Nothing comes from a bottle.

Most halal spots in Boston wrap up by 10 or 11 PM. FRIES B4 GUYS stays open until 2 AM every day. That was a deliberate call. Allston has a big student population from BU and BC and those students need real food late at night.
